Ingredients

  • 2.0 250ml slices Cucumber, raw
  • 1.5 cup cherry tomatoes Tomatoes, red, ripe, raw, year round average
  • 70.0 g Onions, red, raw
  • 0.5 cup, sliced Peppers, sweet, green, raw
  • 100.0 g Cheese, feta
  • 60.0 g Olives, ripe, canned (small-extra large)
  • 3.0 15ml Vegetable oil, olive
  • 2.0 15ml Lemon juice, raw
  • 1.0 tsp, leaves Spices, oregano, dried
  • 0.5 tsp Salt, table
  • 0.25 5ml whole Spices, pepper, black

Instructions

  1. Cut the cucumber in half lengthwise, then slice into half-moons. Quarter the tomatoes. Thinly slice the red onion. Dice the green pepper.

  2. Combine the cucumber, tomatoes, red onion, green pepper, and olives in a large bowl.

  3. Crumble the feta cheese over the top.

  4. In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper.

  5. Pour the dressing over the salad and toss gently. Serve immediately.
