Cook the rice according to package directions. Set aside.
Cut the chicken breast into bite-sized pieces. Season with salt and pepper.
Cut the broccoli into small florets. Mince the garlic and grate the ginger.
Heat the olive oil in a large wok or skillet over high heat. Add the chicken and cook for 5-6 minutes until golden and cooked through. Remove and set aside.
Add the sesame oil to the same pan. Add the garlic and ginger, stir-fry for 30 seconds until fragrant.
Add the broccoli florets and stir-fry for 3-4 minutes until bright green and tender-crisp.
Return the chicken to the pan. Add the soy sauce and toss everything together for 1 minute.
Serve the stir-fry over the cooked rice.
